In case you missed it… Chef Martin Demoed the Low Country Boil for The Weather Channel Friday July, 24.

The Weather Channel invited Chef Martin of Aspen Grille to demonstrate a southern favorite, the Low Country Boil, on the Myrtle Beach Boardwalk Friday, July 24.  “This one-pot wonder is a combination of shrimp, sausage, corn, and potatoes. It’s a crowd pleaser that is perfect for relaxing with friends in a casual, beach atmosphere.” says Martin.

As promised, here is his recipe for the perfect boil.

LOW COUNTRY BOIL

Serves 4-6
2 lbs. shrimp peeled and deveined
2 lbs. Red Potatoes washed and middle peeled
4 ears of corn – shucked and cut in half
2 lbs. Andouille Sausage cut up into large pieces
½ large onion cut in half
1 lemon cut into 4 pieces
1 12 oz. beer
2 tbsp Old Bay
2 pieces Peeled whole Garlic or 1 T chopped
1 tbsp chopped thyme
1 tbsp chopped parsley
2 bay leaves
Salt and pepper

Fill large stockpot halfway with water. Add onion, beer, garlic, Old Bay, herbs, a pinch of pepper, and bay leaves. Add generous pour of salt. Bring to a boil. Add potatoes, cook for 15 minutes. Add sausage and corn, continue to cook for 15 minutes. Add shrimp, cook for 4 minutes. Strain and pour onto table or into desired serving dish. Sprinkle with lemon juice and Old Bay. Serve with Cocktail sauce and drawn butter.
